Summer Pasta with Wild Herb Botanicals AWAKE CBD Oil
4 slices of bacon
2 zucchinis (1 yellow, 1 green) use a vegetable peeler to turn them into ribbons
½ of a small, sweet onion (or whatever kind of onion you have), finely chopped
1 ear of fresh corn (or ½ c of frozen), kernels removed
1-2 tbl fresh basil, cut or torn
2-3 tbl fresh chives, finely chopped
¾ c of fresh tomatoes, cherry or heirloom, halved or cut into bite-size pieces
Extra Virgin Olive Oil
⅓ lb of Linguine Pasta
Freshly ground pepper
Maldon flaky salt for finishing (if desired)
1 dropper full of Wild Herb Botanicals AWAKE CBD Oil
Start a large pot of salted water to boil, while you work on the sauce.
Cut up bacon into ½” pieces and cook over medium in a large saute pan until browned and crispy. Remove bacon with a slotted spoon and reserve for later (leave half of the bacon fat in the pan, pour out the rest). Add 1 tbl of olive oil if needed to the saute pan. Add finely chopped onion to pan, a sprinkle of salt and cook until translucent.
Add pasta to boiling water and cook according to the package’s directions and al dente while you finish the sauce.
Add the corn to the oil and onions and saute for 3-4 minutes.
Reserve 1 cup of pasta water, then drain pasta and add pasta directly to the saute pan with onions and corn. Grate parmesan and pecorino onto the pasta directly, add ½ c of the reserved pasta water (add more if needed). Toss. Add back in reserved bacon pieces, ribbons of zucchini, tomatoes and chopped chives, cook maybe 1 more minute until pasta water is reduced, then turn off heat, Sprinkle with salt and pepper, and toss again. Portion onto two bowls, and drizzle each with a half a dropper full of Awake CBD Oil. Serve with torn pieces of basil on top and some more grated pecorino and parmesan. Enjoy on a summer evening.
