1 Shallot, minced
1 TBL Rice Vinegar & 2 TBL Turmeric Vinegar
2 TBL Olive Oil
Salt & Pepper
Fresh Tarragon & Thyme
2 Golden Beets & 2 Purple Beets
1/2 Ripe Orange
Handful of Arugula
Fresh Goat Cheese, crumbled
2 dropperfuls of 'Awake' CBD Oil
Directions:
Combine shallot w/ vinegars and let sit for at least 10 minutes to pickle before adding olive oil, 'Awake' CBD Oil, and salt & pepper to taste.
Scatter arugula over plate and arrange thinly sliced beets on top in between slices of orange
Spoon dressing over salad
Crumble Goat Cheese over the top
Sprinkle over fresh herbs
Finish w/ Maldon Salt & freshly ground pepper
This is such a bright and colorful salad in the middle of the blah of winter! I can't get enough. I served this with more arugula and grilled chicken. The beets were even better sitting to marinate for a few hours before dinner. The turmeric and CBD give added anti-inflammatory and antioxidant benefits, and there's tons of folate from the beets to support good heart health.
