Winter Beet & Citrus Salad w/ Turmeric Vinaigrette



1 Shallot, minced

1 TBL Rice Vinegar & 2 TBL Turmeric Vinegar

2 TBL Olive Oil

Salt & Pepper

Fresh Tarragon & Thyme

2 Golden Beets & 2 Purple Beets

1/2 Ripe Orange

Handful of Arugula

Fresh Goat Cheese, crumbled

2 dropperfuls of 'Awake' CBD Oil




Directions:


  • Combine shallot w/ vinegars and let sit for at least 10 minutes to pickle before adding olive oil, 'Awake' CBD Oil, and salt & pepper to taste.

  • Scatter arugula over plate and arrange thinly sliced beets on top in between slices of orange

  • Spoon dressing over salad

  • Crumble Goat Cheese over the top

  • Sprinkle over fresh herbs

  • Finish w/ Maldon Salt & freshly ground pepper


This is such a bright and colorful salad in the middle of the blah of winter! I can't get enough. I served this with more arugula and grilled chicken. The beets were even better sitting to marinate for a few hours before dinner. The turmeric and CBD give added anti-inflammatory and antioxidant benefits, and there's tons of folate from the beets to support good heart health.
