Burrata, Asparagus & Crispy Prosciutto Salad

This salad encompasses a bunch of fresh spring produce as well as creamy Burrata and savory, crispy proscuitto and each dish is finished with a dropper full of the 'Awake' CBD Oil (or about 17 mg of CBD per person).

You will need for 2 people:

  • 1 large handful of asparagus, ends trimmed

  • 2 pieces of proscuitto

  • 2 balls of burrata

  • zest of one lemon

  • 1 large handful of fresh peas

  • a handful of pea shoots

  • Good olive oil, Maldon salt, freshly cracked pepper, and Aleppo chile flakes

  • 2 droppers full of 'Awake' CBD Oil from Wild Herb Botanicals

Begin by baking the proscuitto on a rimmed baking sheet at 375 for about 10 minutes or until crispy and rendered. Meanwhile, pan roast the asparagus in a very hot pan on the stove, leaving the asparagus to char a little before flipping. Do not touch until the other side chars up nicely as well. Sprinkle asparagus with salt and zest some fresh lemon peel over the top, and set aside.

Arrange on plate: Divide the asparagus between two plates. Add a ball of burrata to the center and gently break it open. Scatter half of the raw peas over each dish. Drizzle everything with some olive oil, and add a dropper full of the 'Awake' CBD Oil all over, on each dish. Sprinkle with salt, grind over some pepper, dust with Aleppo chile flakes, and zest on a little more lemon. Place one piece of crispy proscuitto onto each plate. Scatter some pea shoots over the top, and enjoy!
